Dessance // Paris

Not sure if you noticed (lack of good dessert is recurring topic in our reviews of restaurants in Japan) but we’re really fond of desserts and sweets. We even have a tendency to take a look at it before the meal menu sometimes. You can imagine how excited we were, when we heard that a new ‘dessert’ restaurant is opening up in Paris.

Decor is pretty simplistic, tables are lining around one wall and you have the open kitchen and bar on the other side. High ceilings, light wood and light colors makes the room open and airy.

Sitting at the bar side and watching the kitchen staff prepare dessert after dessert with grace and care is also another way of enjoying your dessert menu if you are up for it.

Luckily, the menu is not only sweet. There are a few starter/small dishes that would allow you to come with people who don’t necessarily ‘love’ sweets. On top that, dried veal with asparagus that we have tried was pretty tasty and refined.

Mash soup (veloute) with macadamia nuts and pear was the amuse-bouche. As in all their culinary creations, exquisite tastes complete each other perfectly.

Parsley ice-cream topped with cream cheese (fromage blanc) and served with strawberries. Was really subtle and was the perfect starter for a all-dessert menu.

Banana served with celery bits, crumble topping.

Pear served with chervil cream and Greek yogurt ice-cream was another good example how the Dessance manages to mix salty sounding and tasting ingredients with sweet ones.

No dessert is complete without a chocolate finish. I was slightly worried that our experience would not be perfect if the chocolate cake wouldn’t meet our expectations but was immediately relieved once the first slice reached my mouth.

Marshmallow and sesame biscuits were served as mignardise.

Restaurant is in the Marais area, a little away from the shopping area but still only a short walking distance away. As you would expect from any mid-high end restaurant in Paris, it is pretty subdued from outside.
